Fried Green Tomato Salad

In India, fried green tomatoes are common in salads and as side dishes. This simply spiced fried tomato dish can be served as a side or appetizer. While usually enjoyed freshly prepared, these green tomatoes become more flavorful the next day, after the spices and lemon or lime juice have had a chance to more properly meld. Ingredients

  • 4 or 5 large green tomatoes
  • 1 Tbsp (15 ml) coconut oil
  • 1 Tbsp (15 ml) ground coriander
  • 1/4 tsp (1.25 ml) masala powder
  • 1/4 tsp (1.25 ml) sea salt
  • 1 Tbsp (15 ml) fresh lime or lemon juice
  • 1/4 cup (60 ml) chopped cilantro (coriander leaves)
  • 1 cup (133 g) diced cucumber (optional)

Directions

  1. Cut each tomato into 6–8 segments or wedges. Alternatively, they can be cut into thick slices.
  2. Heat oil over medium-high heat in a large cast-iron skillet. Add coriander, masala powder, and salt.
  3. Add tomatoes and fry for 4–5 minutes on each side.
  4. Add salt and lime juice. Mix well.
  5. Garnish with cilantro and serve with cucumber for a refreshing salad or side dish.
