Yogurt and Spinach Soup

Homemade yogurt is a staple in Indian homes, where it is often freshly made daily. This simple, hearty yogurt and spinach soup is quick to make. Serve alone or with warm naan.

Ingredients

  • 1 Tbsp (15 ml) vegetable oil
  • 1 tsp (5 ml) cumin seeds
  • ½ tsp (2.5 ml) mustard seeds
  • 2 cups (480 ml) spinach
  • 3 cups (720 ml) plain yogurt
  • 1 cup (240 ml) water
  • 1 tsp (5 ml) salt
  • ½ cup (120 ml) fresh mint leaves

Directions

  1. In a large skillet, heat oil on high. Add cumin and mustard seeds; be careful of seeds popping in hot oil.  
  2. Stir in spinach and lower heat to medium. Cook till spinach wilts, about 3 minutes.  
  3. Add yogurt, water, and salt. Stir and mix well into a smooth consistency. Simmer on low, covered, for 5 minutes.
  4. Serve garnished with fresh mint leaves.
