Yogurt and Spinach Soup
Homemade yogurt is a staple in Indian homes, where it is often freshly made daily. This simple, hearty yogurt and spinach soup is quick to make. Serve alone or with warm naan.

Ingredients
- 1 Tbsp (15 ml) vegetable oil
- 1 tsp (5 ml) cumin seeds
- ½ tsp (2.5 ml) mustard seeds
- 2 cups (480 ml) spinach
- 3 cups (720 ml) plain yogurt
- 1 cup (240 ml) water
- 1 tsp (5 ml) salt
- ½ cup (120 ml) fresh mint leaves
Directions
- In a large skillet, heat oil on high. Add cumin and mustard seeds; be careful of seeds popping in hot oil.
- Stir in spinach and lower heat to medium. Cook till spinach wilts, about 3 minutes.
- Add yogurt, water, and salt. Stir and mix well into a smooth consistency. Simmer on low, covered, for 5 minutes.
- Serve garnished with fresh mint leaves.
