Seviya Kheer (Vermicelli Rice Pudding)
Seviya kheer (vermicelli rice pudding) is a mild and soothing dessert that makes a perfect conclusion to a rich meal. Consisting of toasted vermicelli boiled in milk and ghee with spices and dried fruit, then topped with nuts, this popular Indian dessert may be served hot, warm, or cold.

Ingredients
- 2 Tbsp (30 ml) ghee
- 4 whole cloves
- 4 cardamom pods, crushed
- 1 cup (75 g) vermicelli, broken
- 2 cups (475 ml) milk
- 2 Tbsp (30 ml) sugar
- 2 Tbsp (30 ml) golden raisins
- 2 Tbsp (30 ml) toasted, chopped pistachios
Directions
- Melt ghee in a pan over medium-high heat. Add cloves and cardamom and sauté for 2 minutes.
- Add vermicelli and sauté vermicelli to golden brown, about 4 minutes.
- Add milk and bring to a gentle boil. Then add sugar, stir well, and simmer over medium-low heat for 5 minutes.
- Add raisins, stir, and then simmer for 2 minutes.
- Garnish with pistachios and serve.
