Seviya Kheer (Vermicelli Rice Pudding)
Seviya kheer (vermicelli rice pudding) is a mild and soothing dessert that makes a perfect conclusion to a rich meal. Consisting of toasted vermicelli boiled in milk and ghee with spices and dried fruit, then topped with nuts, this popular Indian dessert may be served hot, warm, or cold. Recipe Servings: Serves 4

Ingredients
- 2 Tbsp (30 ml) ghee
- 4 whole cloves
- 4 cardamom pods, crushed
- 1 cup (75 g) vermicelli, broken
- 2 cups (475 ml) milk
- 2 Tbsp (30 ml) sugar
- 2 Tbsp (30 ml) golden raisins
- 2 Tbsp (30 ml) toasted, chopped pistachios
Directions
- Melt ghee over medium-high heat. Sauté cloves and cardamom for 2 minutes.
- Sauté vermicelli to golden brown, about 4 minutes.
- Add milk, and bring to a gentle boil
- Add sugar and stir well.
- Simmer over medium-low heat for 5 minutes.
- Add raisins. Stir, then simmer for 2 minutes.
- Garnish with pistachios and serve.
