Puran Poli (Sweet Lentil Flatbread)
Puran poli is a popular, sweet flatbread offered as prasad (blessed food from devotees) to honor the Hindu elephant god, Lord Ganesha, especially in Maharashtra and Gujarat states. Puran, a sweet lentil filling, is encased in poli, a flatbread made from whole wheat and all-purpose flours. Recipe Servings: Serves 4

Ingredients
Puran:- 2 cups (400 g) chana dal (yellow lentils)
- 5 cups (1.2 l) water
- 1 1/2 cups (150 g) jaggery
- 1 1/2 cups (360 ml) water
- 1/4 tsp (2.5 ml) nutmeg
- 1/4 tsp (2.5 ml) cardamom
- 2 cups (240 g) whole wheat flour
- 1 cup (120 g) all-purpose flour
- 2 Tbsp (30 ml) oil
- 1/2 tsp (2.5 g) sea salt
- 1/2–1 cup (120 ml–240 ml) water
- 4 Tbsp (60 ml) melted ghee
Directions
- Puran:
- Rinse dal in a few changes of water until water runs clear. Soak for 2 hours.
- Boil chana in water until soft. Mash in the pan.
- Add jaggery and cook until paste comes away from the sides of the pan.
- Add nutmeg and cardamom. Stir well.
- Make 8 balls. Cover until needed.
- Poli:
- Mix flours, oil, and salt well.
- Add water, starting with 1/4 cup (60 ml) for a soft dough. Knead for 5 minutes.
- Cover and let rest.
- Divide into 8 balls.
- Assembly:
- Roll poli balls into circles (about 4–5 in or 10–12 cm) on a floured surface.
- Place a puran ball in the middle of each poli disk. Wrap poli disk around puran to create a layered ball. Roll out flat.
- Heat a teaspoon of ghee. Fry until puran poli blisters. Flip and cook to a light brown.
- Serve drizzled with melted ghee.
