Puran Poli (Sweet Lentil Flatbread)

Puran poli is a popular, sweet flatbread offered as prasad—blessed food given by devotees—to honor the Hindu elephant god, Lord Ganesha. It is especially popular in Maharashtra and Gujarat states. Puran, a sweet lentil filling, is encased in poli, a flatbread made from whole wheat and all-purpose flours.

Ingredients

Puran:
  • 2 cups (400 g) chana dal (yellow lentils)
  • 2 cups (480 ml) water, plus water for rinsing and soaking
  • 1½ cups (150 g) jaggery
  • ¼ tsp (2.5 ml) nutmeg
  • ¼ tsp (2.5 ml) cardamom
Poli:
  • 2 cups (240 g) whole wheat flour
  • 1 cup (120 g) all-purpose flour
  • 2 Tbsp (30 ml) oil
  • ½ tsp (2.5 g) salt
  • ½–1 cup (120 ml–240 ml) water
  • 4 Tbsp (60 ml) melted ghee

Directions

    Making the Puran:
  1. Rinse chana dal in a few changes of water until water runs clear. Then cover with water and soak for 2 hours.
  2. After soaking, boil chana dal in 2 cups (480 ml) of water until soft. Then mash in the pan.
  3. Add jaggery and cook until paste comes away from the sides of the pan.
  4. Add nutmeg and cardamom. Stir well.
  5. Shape into 8 balls and cover until needed.
  6. Making the Poli:
  7. Mix flours, oil, and salt well.
  8. Add water, starting with ¼ cup (60 ml), to make a soft dough. Knead for 5 minutes. Then cover and let rest.
  9. Cooking and Assembly:
  10. Divide dough into 8 balls. Roll poli balls into circles (about 4–5 in/10–12 cm) on a floured surface.
  11. Place a puran ball in the middle of each poli disk. Wrap poli disk around puran to create a layered ball.
  12. Roll out flat.
  13. Heat a teaspoon of ghee in a large skillet on medium-high heat. Fry until puran poli blisters. Flip and cook to a light brown.
  14. Serve drizzled with melted ghee.
