Papadum (Crunchy Lentil Wafer)

Papadums (also called papads and appalams) are divinely crunchy lentil wafers which entice diners with tamarind, golden mango, or light green cilantro-coconut chutney. Papadum with chutney is a favorite Indian appetizer. Quick and easy to make from scratch, papadums are also often available in Indian grocery sections.

Ingredients

  • 2 cups (184 g) lentil flour
  • ½ tsp (2.5 ml) cumin
  • ½ tsp (2.5 ml) salt
  • ¼ tsp (1.25 ml) black pepper
  • 2 Tbsp (30 ml) water
  • 3 Tbsp (45 ml) oil

Directions

  1. Preheat oven to 200°F (95°C).
  2. Combine flour, cumin, salt, and pepper. Add water and knead to form a dough.
  3. Divide dough into 8 balls. On a floured surface, roll dough balls into thin rounds.
  4. Place rounds on baking trays. Bake for 60 minutes.
  5. Remove baking trays from the oven and heat oil over medium-high heat.
  6. Fry papadums one at a time, flipping with tongs to lightly brown both sides.
  7. Serve with chutney for an appetizer, or as-is for a snack.
