Fried Green Tomato Salad

In India, fried green tomatoes are common in salads and as side dishes. This simply spiced fried tomato dish can be served as a side or appetizer. While usually enjoyed freshly prepared, this dish may be even tastier the next day, after the tomatoes, spices, and lime juice have had a chance to more thoroughly meld.

Ingredients

  • 4 or 5 large green tomatoes
  • 1 Tbsp (15 ml) coconut oil
  • 1 Tbsp (15 ml) ground coriander
  • ¼ tsp (1.25 ml) masala powder
  • ¼ tsp (1.25 ml) salt
  • 1 Tbsp (15 ml) fresh lime juice
  • ¼ cup (60 ml) chopped coriander (cilantro) leaves
  • 1 cup (133 g) diced cucumber (optional)

Directions

  1. Cut each tomato into 6–8 wedges or thick slices.
  2. Heat oil over medium-high heat in a large cast-iron skillet. Add coriander, masala powder, and salt.
  3. Add cut tomatoes and fry for 4–5 minutes on each side.
  4. Add salt and lime juice. Mix well.
  5. Garnish with fresh coriander (cilantro) and serve with diced cucumber for a refreshing salad or side dish.
