Fried Green Tomato Salad
In India, fried green tomatoes are common in salads and as side dishes. This simply spiced fried tomato dish can be served as a side or appetizer. While usually enjoyed freshly prepared, these green tomatoes become more flavorful the next day, after the spices and lemon or lime juice have had a chance to more properly meld. Ingredients
- 4 or 5 large green tomatoes
- 1 Tbsp (15 ml) coconut oil
- 1 Tbsp (15 ml) ground coriander
- 1/4 tsp (1.25 ml) masala powder
- 1/4 tsp (1.25 ml) sea salt
- 1 Tbsp (15 ml) fresh lime or lemon juice
- 1/4 cup (60 ml) chopped cilantro (coriander leaves)
- 1 cup (133 g) diced cucumber (optional)
Directions
- Cut each tomato into 6–8 segments or wedges. Alternatively, they can be cut into thick slices.
- Heat oil over medium-high heat in a large cast-iron skillet. Add coriander, masala powder, and salt.
- Add tomatoes and fry for 4–5 minutes on each side.
- Add salt and lime juice. Mix well.
- Garnish with cilantro and serve with cucumber for a refreshing salad or side dish.
