Barfi (Milk Fudge)

Barfi, or burfi, a beloved confection in India, is made mainly from dairy products and sugar. This popular milk fudge snack and dessert sports toppings from silver and gold leaf to nuts (pistachios) to dried fruit (apricots) to spices (cardamom, saffron), and espresso powder. Ingredients

  • 1/4 cup (60 ml) ghee
  • 1/4 cup (60 ml) milk
  • 1/2 cup (100 g) sugar
  • 1 cup (125 g) milk powder
  • 1/4 tsp (1.25 ml) freshly ground cardamom
  • 1/4 cup (40 g) chopped pistachios

Directions

  1. Gently bring ghee, milk, and sugar to a boil.
  2. Cook over medium heat for 20 minutes until quite dry, stirring constantly to avoid burning.
  3. Add cardamom and pistachios. Mix well.
  4. Pour into an 8 x 8-inch (20 x 20-cm) square pan. Smooth the surface.
  5. Cover and refrigerate for 2 hours until firm. Cut into diamonds or squares with a sharp knife.
  6. Serve cold or at room temperature.
