Barfi (Milk Fudge)

Barfi, or burfi, a beloved confection in India, is made mainly from dairy products and sugar. This popular milk fudge snack and dessert sports toppings from silver and gold leaf to nuts (pistachios) to dried fruit (apricots) to spices (cardamom, saffron), and espresso powder. Barfi is often made for holidays, weddings and other special celebrations.

Ingredients

  • ¼ cup (60 ml) ghee
  • ¼ cup (60 ml) milk
  • 1 cup (125 g) milk powder
  • ½ cup (100 g) sugar
  • ¼ tsp (1.25 ml) freshly ground cardamom
  • ¼ cup (40 g) chopped pistachios

Directions

  1. Add ghee and milk to a medium pot and gradually bring to a boil.
  2. Once the ghee has melted, add in the milk powder and stir to combine. Then gradually add the sugar and stir until fully incorporated.
  3. Cook mixture medium heat for 20 minutes until quite dry, stirring constantly to avoid burning.
  4. Add cardamom and pistachios and mix well.
  5. Pour mixture into an 8 x 8-inch (20 x 20-cm) square pan. Smooth the surface.
  6. Cover and refrigerate for 2 hours until firm.
  7. Cut into diamonds or squares with a sharp knife. Serve cold or at room temperature.

Notes

Barfi is often garnished with slivered pistachios, rose buds, saffron threads, coconut, or even silver leaf.
