Pakora (Fried Snack)

Pakora is a common fried snack eaten throughout India. It also goes by several names, including pakoda, fakkura, ponako, bhajiya, or bhajii. Originally from India, pakora are now commonly eaten throughout South Asia. Deep-fried and eaten as a snack or appetizer, they are made from chickpea flour, onion, spices, and some kind of vegetable.

Ingredients

  • 1 cup (90 g) chickpea flour
  • 1 small onion, chopped
  • 1 green chile, chopped
  • ¼ tsp (1.25 ml) baking powder
  • ½ tsp (2.5 ml) ground cumin
  • 1 tsp (5 ml) garam masala 
  • Fresh coriander leaves (cilantro), to taste
  • Mint leaves, to taste
  • Salt, to taste
  • ½ cup (120 ml) water
  • Oil, for deep frying

Directions

  1. Mix together everything except water and oil.
  2. Slowly add water until mixture becomes a thick paste.
  3. Heat oil for deep-frying in a heavy-bottomed pan over medium-low heat.
  4. Drop tablespoons of batter into oil and fry, being careful not to crowd pan. Turn and cook on both sides until golden brown.
  5. Serve hot with chutney.
